The heart is the leanest cut of muscle in an animal's body. It is also one of the more versatile types of offal: it's tough and low in fat but can work well with either quick cooking or long stewing. It provides good quantities of protein, thiamine, folate, selenium, phosphorus, zinc, CoQ10 and several B vitamins.
