Boned Lamb shoulder, trimmed, rolled and ready to go! Perfect to pair with garlic and rosemary it is best cooked slowly, either roasted or braised. Compared to a leg of lamb the slightly higher fat content results in a very tender, succulent eat.
Spread your favourite dry rub or marinade all over and place onto a rack, on a baking tray, cover bottom of the tray with water. Preheat the oven to 160C and cover your baking tray with foil. Roast it for 3-4 hours. Remove foil at the last 20-30 mins.
