Ingredients for Lemon Chilli Chicken

  • Bone in Skin On Chicken Thighs
  • Olive Oil
  • Lemon Juice
  • Lemon Rind
  • Spring Onions
  • Chilli Flakes (to taste)
  • Fresh Dill and Thyme (can use dried)
  • Salt and Pepper

METHOD

Preheat oven to 175 degrees

Coat Chicken in seasoned flour. (GF works)

Mix olive oil lemon juice, lemon rind, chilli, dill, thyme, salt and pepper to taste. 

Pour over chicken.

Cook for approx 30 minutes or to when basting  juices run clear.

Garnish with fresh thyme, lemon wedges and chilli (optional)

Serve with your favourite summer salad.
