The Rump Cap (also know as Picanha) is an awesome cut of meat and popular with our chefs. Sitting between the sirloin and topside the cap is tender with a layer of fat that sits across the top. This adds a beautifully rich depth of flavours and moistens the meat as it cooks. 

Great for smoking.

Small: 0.9-1.4kg 

Large: 1.5-2kg

 

Spread your favourite dry rub all over and place into a baking tray, cover bottom of the tray with water. Preheat the oven to 160C and cover your baking tray with foil. Roast it for 2-3 hours. Remove foil at the last 20-30 mins.
