Lamb Square Cut Shoulder Roast (2.2 - 2.7kg)
Perfect for slow roasting, the Grass Fed and Finished Lamb Square Cut Shoulder Roast develops a lush, rich and tender texture as it slowly cooks.
Preheat your oven to 160C. Season the lamb generously on all sides with salt and pepper, then add other flavourings such as garlic or rosemary if desired. Pan seal before placing the lamb roast on the rack of your roasting pan, and place the oven.
Slow-roast the shoulder for 2 to 3 hours, until it's so tender you can easily pull off a morsel with your fork.
Otherwise cut into cutlets, season and sear in a hot pan. Then place in a moderate oven for 10-12 for medium rare. What a versatile cut!
