Beef Kidney Whole
If you’re looking for a way to get lots of protein without lots of fat, give kidneys a go. They also contain heaps of Vitamin B12, riboflavin and iron, as well as healthy amounts of B6, folate and niacin.
Kidney meat responds well to braising, pan broiling and frying. Add chopped vegetables to the braising liquid along with the kidneys to make a stew that can be spooned over rice or mashed potatoes, bake into a steak & kidney pie or serve cooked beef kidneys with crusty whole-wheat bread to mop up the sauce.
