Made popular in Argentina as the Entrana steak, this Outside Skirt cut of beef is long, flat and flavourful.  Entrana is a thin cut and should be cooked hot and fast on the grill or cast iron skillet whole, then sliced against the grain after resting. 

We recommend seasoning with salt and pepper for at least one hour before grilling.  Entrana is usually served with chimichurri sauce (easy to make -> blend garlic, parsley, salt & pepper, oregano, olive oil, red pepper and a mild vinegar).

Much different to the photo

I was very confused when we got several very long, strips of various width and length (most pieces looking like the beef finger intercostals, some looking like off cuts/ random bite-sized pieces of meat). The meat was very tasty but some pieces weren't able to be sliced against the grain due to how thin or small they were -making them very chewy. I'm hoping this was a one-off but including some more realistic photos would be appreciated (I sadly wasn't able to photograph at the time)

Great Cut - Great Find

As flavourful as Hanger steak and as easy to handle as the more expensive cut. Don't want to reveal the secret honestly but I really want DCF to keep this cut available as much as they can
