Short Rib Mecca

Took on these short ribs with a little mustard, bbq sauce and maple syrup binder….

Added some Lanes dry rub on top, covering all sides, and whacked it in the gravity fed smoker for 8 hours. Wrapped them and finished them in the oven where they hit a 94C internal temp.

Once they dropped back to 65C, I pulled them back out to see the results.

And OMG they did not disappoint! Probably the best ribs I’ve ever done. Juicy, tasty, fall off the bone goodness…

Definitely recommend these if you like to enjoy big meaty beef ribs!!!

Beef Short Ribs

Wow!! Great ribs!!

The rack I received was 3.9kg and after smoking for around 19 hours were just amazing. Ordered 2 more racks straight after this cook.

9 hour jam wattle smoked

Bought this to throw on the diy revers flow pit along with the spare and chuck sold by DCF. Performance across the board was good. These were much thinner as expected but certainly didn't disappoint. Good pull back for a meater bite prior to wrapping at 175F to finish at 203F. Perfectly tender. Only down side was the last bone + meat had to come off as this was just way too thin to survive the cook. Dogs were stoked! See ribs 2x ribs left. The other two ribs noted are seen right.

Meaty and Flavourful

I bought this cut to make a fiery mexican style braised beef rib and it didn't disappoint. It was first seared and the braised long and slow in an tomato adobo sauce. There was plenty of meat when the plate was divided up into individual ribs, and our 2.7kg plate fed 8 hungry guests who were delighted!
