Our pork collar butt (shoulder) is also known as the scotch - an American style cut from the shoulder. Great for slow roasting or cooking, it stays moist for the tender-est and juiciest bite.

Our pork is pasture raised in Manjimup by Bryan Hickman. It is processed in house by our team of skilled butchers in Perth, WA. Find out more about our suppliers here.
