Sometimes referred to as the “Butcher’s Steak”, because butchers would often keep it for themselves. Great to marinade and perfect for hot and fast on a grill, this cut is prized for its flavour. 

A great recipe to follow would be Momofuku’s, which simply uses a marinade consisting of apple juice, soy, onion, garlic, sesame oil and pepper for up to 24 hours, followed by grilling.

So tasty

An absolutely delicious cut of beef. I marinated it for a couple of hours in olive oil, then made up a bush spice mix to coat it in. Hot grill pan for a few minutes each side until medium rare. Goes great with horseradish creme fraiche on top.

Beef Hanger Steak

Very tasty and extremely tender. I made this into Mongolian beef. Any fascia on the muscle was cut out the beef was cut across the grain and was velveted for an hour in a little bicarb, corn flour and Shaoxsing Wine (xangjiu wine) it probably didn’t need it. It was very tender and tasted great. A nice rich deep flavoured beef that stood up to the rich flavours of the Mongolian sauce.
