Also known as Puy lentils, these distinctive green lentils are a variety originating from Puy in France. In line with our sustainability and regionality goals here at Mount Zero, we source ours a little closer to home...specifically, the rich, self-mulching soils of the Wimmera region in western Victoria.
The Wimmera’s long cold winters and hot dry summers offer perfect growing conditions for this lentil, which is characterised by its nutty flavour, thin skin, firm texture and general ease of cooking. For these reasons, the French style green lentil is a classic chef favourite, and forms the basis of many great salad and soup recipes. They're also a great companion to feta, chèvre, mint, peas, tomatoes and game meats.
Rinse lentils and add 1 cup (250g) French style green lentils to 3 cups (750ml) water in a saucepan. Bring to the boil then lower heat and simmer for 20-25 minutes, stirring occasionally until just cooked.
