In our Dirty Clean Food version, we're simplifying the process with cherry tomatoes, quartered, on a bed of Hippie Veggies vegan pesto.You won't miss hassle of peeling garlic while churning through your morning coffee, and can enjoy our crowd favourite pesto with a quick scoop and smooth over your favourite crusty bread.

You can prep your tomato mixture the day before,  in fact, the olive oil and salt embed themselves into the tomato juices overnight for an even more intense tangy hit if you dare.

Ingredients

SERVES 4
  • 1 punnet of cherry tomatoes

  • 1 tbsp Dirty Clean Food pesto

  • 1 large stem of basil, leaves slices into thin ribbons with small leaves reserved for topping

  • Extra virgin olive oil

  • 4 slices of crusty bread, toasted

  • Salt, to taste

  • Pepper, to taste

Method

  1. Quarter the cherry tomatoes and place into a small mixing bowl

  2. Season with salt and pepper, add basil and drizzle a generous amount of olive oil and toss with a spoon. Taste your mixture, and season to your liking.

  3. Spoon a small amount of Hippie Veggie pesto onto toast, and smear to cover the slice. 

  4. Spoon your bruschetta mixture on top,  and dress with your basil. Enjoy!
