Topside is the long inner muscle of the cow’s thigh in its hindquarters. Lean and versatile for a range of slow cooking methods, allow for it to break down and melt in your mouth. Topside has a deliciously rich, savoury flavour and makes the perfect centrepiece for Sunday lunch. Product is MSA graded, grass fed and regeneratively grown.
Spread your favourite dry rub all over brisket and place into a baking tray, cover bottom of the tray with water. Preheat the oven to 160C and cover your baking tray with foil. Roast it for 3-4 hours. Remove foil at the last 20-30 mins.
