The fillet, or tenderloin, is prepared from a side of lamb. Because it comes from an area that does very little work, it has virtually no fat or connective tissue making it the most tender cut of lamb. Delicate in flavour the tenderloin suits gentle quick, dry cooking methods to retain its juiciness.
Bring meat to room temperature prior to cooking. Treat the tenderloin as having three sides. Fry in hot pan for 1 minutes on each side. Remove and rest for 5 minutes before serving.
