Lean and flavorful, this steak should be thinly sliced against the grain when carving. Cut from the beef flank primal cut it is an ideal choice to marinate for a quick, dry cook or braise to improve tenderness.

Chill steak to room temperature 15 minutes prior to cooking. Season steak and sear it on one side for 2-2.5 minutes, turn and sear for another 2 minutes. Cover loosely with foil for 5 minutes and serve.
