Pasture Raised Pork (98%), Fennel, Garlic, Rosemary, Black Pepper, Onion Flakes.
Preheat oven to 170*C, dry skin and heavily season with Salt and Olive Oil, roast for 2 hours at 170*C, increase oven temperature to 220*C and roast for a further 30 minutes until desired crackling forms and internal temperature reads 72*C. Rest for at least 20 minutes and slice to serve.
Keep product refrigerated below 5*C

I was nervous that the Porchetta might end up a failure since this is the first time I roasted one. But lo and behold, the skin cooked perfectly crackling. Thanks to your instructions and the meat thermometer!
