Grass Fed and Finished Greenrange Lamb (99%), Rosemary, Garlic.
Preheat oven to 200*C, pat dry Lamb and season with Salt and Olive Oil, sear in a hard base pan (Cast-Iron preferred) on all sides and transfer into a roasting dish. Roast for 30-40 minutes at 200*C until internal temperature reads 62*C for medium-rare, 66*C for medium. Rest Lamb for at least 20 minutes and slice to serve.
