As its name suggests, it is cut from the Chuck Roll. Best for low and slow cooking, braising it will bring out its best flavours. 


Heat oil in a hard bottom, oven safe pan and sear Steak on all sides very well. Cover with an inch or 2 of Beef stock and braise in the oven with a lid on at 160* for an hour or so.
