This economical cut is taken from the Saddle of Lamb. Contains two sections of Loin with a small amount of marrow in the centre. Perfect for a hard sear and then finishing off in the oven.

Think of it as a double loin chop for each serve! Winning! 

Chill steak to room temperature 15 minutes prior to cooking. Grill 3 minutes on each side. Remove and rest for 5 minutes before serving.
