Great Southern Groves' black Perigord Truffles (Tuber Melanosporum) are grown locally in Southern Forests and Great Southern Regions of Western Australia. Harvested by their family friend Fabio, ‘The Truffle Guy’ with his lovely dog Luna. The truffles are vacuum sealed to make sure your truffle arrives fresh and full of their earthy aroma and flavour. Your truffles are picked fresh over the weekend and delivered to Perth.

Shelf Life and Storage

Once you receive your truffle, please keep vacuum sealed and refrigerated until use. It is important to keep your truffles dry and cold. Store any excess truffle as above for up to 2 weeks in the fridge or 6 months in the freezer. You may also wish to make truffle butter and store in the freezer until use.

You can also store your truffle in a sealed container with some arborio rice or clean eggs. These will then absorb some of the truffle flavour and aroma before cooking them. If you remove your truffle from its vacuum sealed bag, please place in a tightly sealed container with some clean paper towel. Change the paper towel each day.

 

Cooking with Truffle

Ideally you don’t cook with truffle but stir through or shave/ grate over the top of your dish at the end. The heat from your dish then warms the truffle and releases that amazing flavour and aroma.

Truffles pair beautifully with creamy dishes such as mushroom risotto or a creamy pasta. They are delicious shaved over scrambled eggs, mashed potatoes or a creamy cauliflower soup.
