Kate's Favourite Maple Honey Glaze for your Christmas Ham


Our Warehouse Assistant Manager Kate shared her favourite glaze recipe that she adds to her Christmas Ham. Here's a photo during preparation - sadly we don't have a photo of the finished ham as it was looked too delicious to have to wait for a photo to be taken!!  We hope you enjoy it too.


50g (1/4 cup, firmly packed) brown sugar
40ml  maple syrup
40ml (1/3 cup) Bidjaronning honey
1/2 tbsp dijon mustard
1 Dirty Clean Food Half Leg Ham, on the bone
Whole cloves


    1. Preheat oven to 170C.
    2. Line a large baking dish and place an oven shelf in the lowest position. Use a sharp knife to cut around the shank of the ham, about 10cm from the end. Run a knife under the rind around edge of ham. Gently lift the rind off in one piece by running your fingers between the rind and the fat. Score the fat in a diamond pattern, about 5mm deep. Stud the centres of the diamonds with cloves and transfer to the prepared dish
    3. Brush one-third of the glaze over the ham. Bake, brushing with glaze every 25 minutes for up to 1 hour 30 minutes.
